Owner Louis Dean, who grew up in Philadelphia, said he wanted to offer Iowans the experience of a true Philly sandwich. That means tender grilled meat on a fresh roll with or without cheese and onions. Customers should be prepared to step up to the counter, specify chicken or steak with Provolone, American or Whiz (an in Cheez Whiz) or no cheese. Also indicate with or without onions. To do it the authentic Philly way, just say “wit” or “witout.”
