Q: How did you get started in the service industry?
I was 14 years old and I needed a job for a youngster. It was the next step on the list after detasseling.
Q: What makes someone a good customer?
You can tell a lot about a person by how they treat people in the service industry. Just be respectful and know that you’re not the only customer.
Q: What makes a customer a “regular”? Do you have them at Star Bar?
A regular is someone who comes in often enough that you know what they want and their entire life story, and they treat you well. We have some pretty awesome regulars at Star Bar and others that are, well, medium?
Q: Any customer horror stories?
There are the few people who consume what you brought them and then complain and expect a free meal. It doesn’t work. And, people who puke are bad also.
Q: What’s your favorite night to work at Star Bar?
Thursday night. It’s not too crazy and not too boring, it’s just right. The weekends can get busy.
Q: So how much should people really tip?
If it’s not an expensive meal it should be around $2-$5 per person. It’s not always 20 percent, as some people assume. If the bill is expensive do around 20 (percent), plus (more for) good service.
Q: If you were to recommend a few things on the Star Bar menu to a table of your favorite people, what would they be?
I would make sure to do grilled bread for an appetizer, catfish tacos for a meal, tuna salad for a salad, and Peace Tree brew for a beer.
Q: How do you stay positive when serving gets stressful?
I like to host parties and welcome people into my home. Serving is just like that. It doesn’t have to be super formal, but it does need to be good. I’ve never done anything to anybody’s food or drink, but remember respect is a give-give situation.
