First Look: Proof

What it is

Proof is a new restaurant in the former Western Gateway home of Beggar's Banquet. The name references the baking term, referring to rising dough. "And it's a neat industrial word," said Carly Groben, owner (and Lucca manager), who teamed with executive chef Chris Place  and sous chef Tony Pille to open the new order-at-the-counter eatery.

The interior is minimalist with grey and white walls, and a splash of chartreuse by the counter and the restrooms. The space is warmed up with oak floors, fresh flowers on the fifteen tables and frosted privacy glass on the windows.

Like the dining area, the menu is streamlined, but plenty of choices are available. Offerings include herb salads ($8), grain dishes ($10, like eggplant and tabouleh and salmon risotto), soups, and flatbread sandwiches ($9). Macaroons and cookies were  available when we dined. For business folks wanting an early lunch, Proof will take carry-out orders from 10 a.m.-2 p.m. The restaurant is also available for private events and catering.

Proof serves themed dinners on Friday nights, and themes will be announced via the web site on Mondays (This Friday it's Spanish cuisine).

Where it is

On the corner of 13th and Locust streets, in the former home of Beggar's Banquet, next to Ritual Cafe.

What we tried

It was tricky to decide, since everything looked so good. My dining partner devoured the merguez sausage flatbread. The sausage was tender, surrounded by peppers and a creamy, mild curry sauce.

I tried the half-soup, half-salad combo ($8). The lemon chicken soup was pristine — hearty hunks of white chicken bobbed in a light, buttery, lemony broth. The mesclun scallop salad was equally tasty — the scallops were delicately browned on the outside and smooth on the inside.

Why you should go

Experience elegant Mediterranean fare in a modern environment. City workers will discover that Proof is a pleasant repreive from flourescent lighted offices, and foodies will be pleased to find another gem in the downtown district.
