About the dish: The Quatro Fromaggi white pizza is made with mozzarella imported from New York's Little Italy, gorgonzola, parmesan, provolone, olive oil and garlic. Centro makes its pizzas in a coal-fire brick oven, which heats to 850 degrees, so it only takes about three minutes to cook. "It's probably about the fastest pizza in town, as far as I know," server Joe Howe said. The small pie comes cut into six slices, and until you get to the crispy crust, it's a knife-and-fork pizza.
Why she keeps ordering it: "I like it because the cheese on the top is creamy and the crust is really thin, but crunchy," Kapustiak said. "Sometimes I switch out the gorgonzola for asiago, but then it's not as creamy."
Kapustiak and her boyfriend both work at Wells Fargo Financial and pick up a pizza to go or eat at Centro at least once a month. She's not a fan of red sauce, so this dish is perfect - especially, she thinks, with a salad to start. Her other suggestion for white pizza around town is Northern Lights, which has an Alfredo sauce option.

This sounds delicious! I love Centro pizza, but have never ordred this one. Ill have to try next time.
