Proof is a new restaurant in the former home of Beggar's Banquet. The name references the baking term, referring to rising dough. "And it's a neat industrial word," said Carly Groben, owner, who teamed up with executive chef Chris Place to open the new eatery on Sept. 22, 2008. The restaurant will be a lunchtime spot specializing in Mediterranean cuisine (such as herb salads, pastas, flatbread sandwiches, soups). For those business folks wanting an early lunch, Proof will take carry-out orders from 10 a.m.-2 p.m.
Proof will also serve themed dinners on Friday evenings (such as autumnal and Spanish cuisines), and themes will be announced on the web site on Mondays.
