Bandit Burrito, a creation of local guy Robert Moore, had a grand opening July 1, 2008. The restaurant offers a build-your-own burrito, much like other ubiquitous burrito joints, but with 35 options in eight categories. Select tortillas, vegetarian options, beans, rice, meats, sour creams, cheeses, salsa and toppings and - for those who like it spicy - hot sauces. The same options can be used for nachos supreme, quesadillas, taco and burrito bowls, or the burritos without the tortilla.
