For this signature steak, served at the Johnston venue for more than 18 years, chef Troy Trostel coats a rib-eye in a boldly seasoned rub, then makes sure the steak dominates the hottest part of the grill to allow the rub to form a seared-on crust while sealing in its juices. Named for the way its rub looks a little like gunpowder, the dish also tips its hat at the restaurateur Paul Trostel, a self-described “cowboy at heart” — the Colorado native grew up on a ranch and rode in the rodeo once upon a time.
