Restaurant of the Year: Baru 66
There are many styles of French restaurants, from classic corner bistros to bustling brasseries, and Des Moines has room for them all. This year, however, Baru 66 burst onto the scene, giving local food-lovers a taste of France that we haven’t yet experienced in this town: Contemporary French gastronomy. In the hands of French-born, globe-trotting chef David Baruthio, great ingredients, precise techniques, artistry and imagination combine to bring sumptuous odes to the pleasures of fine dining. Expect strikingly imaginative food that’s playful and precise served without a lick of pretense.
I called co-owner Sara Hill to ask what the restaurant’s plans were for the future. “This isn’t time to sit around on five stars,” she said, referring to their five-star Datebook review last autumn. “We’re continually looking to improve and make things better all the time.”
