During my nearly 12 years as a restaurant reviewer covering the Des Moines dining scene, I’ve witnessed chefs come and go; among the ones with staying power, I’ve watched their cuisine go from underwhelming to wow — and sometimes vice versa.
While there are many chefs cooking in this town whose work I enjoy, I’ve whittled the list of my favorites down to five. And no flashes in the pan — each chef on my list has been cooking around here for at least five years.
